I am looking for examples of artists/bands who developed into something completely unrecognizable to the sound they started out with
Two really good examples of this are Fleetwood Mac (started as a blues group, developed into the band that made Rumours) and Goo Goo Dolls (started as a Husker-Du influenced punk band, developed into power-balladeers). Beastie Boys too.

Not sure if Fleetwood Mac counts. Buckingham, Nicks, and Christine McVie were the chief songwriters once they joined. The earlier group was led by Peter Green.

Of course they count. Practially two different bands. And there was also a long period in between Green leaving and Buckingham/Nicks joining. They even had a few moderate hits in that period.
