If at some point the Hayden Anakin Force ghost appears in 8 or 9, that change with him being in Jedi will make a lot of sense.

That doesn't make sense either but it is basically George just tinkering that's all.
Himchoosing to appear in that form as the last moment he was good is what I read about it. Think it's canon. I don't really care TBH.

That and they added in all of those celebration scenes after the empire was defeated. And one of them was a bunch of gungans jumping up and down
