Grevious was pretty awesome in that clone wars cartoon series that bridged the two movies, and I was genuinely excited to see him make his appearance, and then they gave him that ridiculous wheeze and that terrible voice acting (the voice acting in the prequels is generally awful)
It should have been a really good Obi Wan story that doesn't stretch 15 years, and makes him partially responsible (through failure) for Anakins fall. That would double down on his satisfying sacrifice later on, limit our reliance on making a character who has to grow into an asshole watchable, and also Ewan at least tried to act in spite of Lucas. Almost no one else can say that.
The standalones as an idea sound terrible to me, not least because I imagine a lot of origins and other awful unnecessary stuff. But I don't doubt that some characters could 100% be tools that are used to tell compelling stories.
The more a character gains from mystery, the less I want a standalone for them. The more likely that an origin story is involved, the less I'm interested. People like Boba Fett, Yoda, etc...no thanks.

I think we are a ways away from a pre-quel reboot, but telling some stories of things that happened during the clone wars could be neat.
to be totally honest, I wouldn't mind Christensen in those movies if he had a decent script and good direction. A movie that actually shows the two of them (anakin and Obi-wan) having a real relationship, with Obi-Wan actually being a mentor and a friend, would probably help the prequels by at least providing some context.
