In 1983 would you have said "oh, this is the story of The Skywalkers!" or would you have said, "it's the story of Luke Skywalker?"
I think most of us would have (or did say) said the latter. Then in 90s Lucas decided he needed to tell the story of Anakin. Then it became "this was always Anakin's story." Nice try, George.
This stuff is always shifting. All I'm saying is, the ST could have been about anything and still be valid and it didn't NEED Skywalkers until the phrase "Skywalker Saga" started getting floated around post-PT. The ST could have squashed that if it wanted to. Instead, it leaned in.
And the thing is, unless Rey ends up being a Skywalker, it makes no real sense calling 7-9 part of the Skywalker Saga. Sure Ben Ren is in it, but the way these stories have been told, this is Rey’s tale, not Ben’s. If Ben is the reason it’s considered it’s part of the Tale of Skywakers, that’s pretty weak.

It all depends on how it all shakes out. But as it stands I tend to agree and that's part of what I was talking about, yes.
At the end of the day, I think calling it The Skywalker Saga and ending it with 9 episodes is a good move. We can move on to new stories, new trilogies, or episodic series. We can have a new Episode 5 that's part of something else. Episode 5 of The Sith Saga, for example.
Back in the day, I wasn't sure there would ever be more SW movies. But I always thought if there were, they'd be part of the same arching serial. Episode 7 would be about whatever and Episode 15 would be about whatever but it would all be under the same "Star Wars" umbrella and chronology. This allows for many, many Episode 3's in many, many different time periods.
Compartmentalizing it this way gives the creators freedom and I like that. But there's no way that was always the plan. If so, Rey would have been a Skywalker or else not the main character of the ST. If this was going to be The Skywalker Saga with a specific end in sight, I think different choices would have been made.

There's no way this is the end of the Skywalkers. This is like a farewell tour by a band. They'll do all these other movies and, while they will make money, they won't bring in the revenue the Skywalker Saga did. Then someone will decide episodes 10-12 need to be made and I'll go to the theater in my Depends and watch them.

There’s a million stories to be told in the Star Wars galaxy. But you can not call them episode seven of an established movie series. Yes, do a movie about other characters a hundred years in the future, but if it had nothing to do with episode six, it would be really foolish if it was episode seven.
At least now we have had Han, Leia, Luke, Kylo, the droids, etc. Not perfect, but it will have to do. Hopefully IX is the ending the saga deserves.

I'm saying you can re-use the numbering sequence for other stories now. You can do Star Wars: The Sith Wars: Episode 1, for example.

Yes, of course. Disney knows people wanted a continuation of ROTJ, but I’m sure there will be new first episodes in the future.
