do you guys get fresh clams or canned? I always assumed that the linguini with clam sauce i had growing up were fresh (coz I was on the ocean), but my wife's parents (NJ Italian) made the dish last week and they had no qualms about using canned clams

an important question
at home, i get it. how often do you have shelled clams nearby.
the restaurant i go to now for it only uses fresh littlenecks (a lot of them) and homemade pasta
I can sometimes be indifferent to a mix of the chopped clams from the can, with a few real clams on top, if it comes out right
but at this point I can't do just the chopped clams from the can at a restaurant. unfortunately it comes out looking more like a soup in most of those cases. and the prices are normally high and it's kind of like 'why?'
if I am doing it at home, cause I am jonesing for it, and can control the amount of wine (a lot) and amount of excess liquid (very little), then yes canned can pass - but i will usually just wait to have it at a resto with shelled clams

how do you clean your live ones before you cook them?
i've seen a trick where if you soak them in water with cornmeal for a while it makes them spit out all their sand and stuff
then when you eat them there will be no grit

I got very close to buying a DVD box set of every Bond film (at the time) in like my early 20’s. It didn’t include the one with that rando actor who played Bond inlynonce, so I didn’t get it because it was incomplete.
